WALK, LEARN & DISCOVER
THE HERB SCHOOL
There is more to the landscape around us than meets the eye.
Across Fingal’s coastline, woodlands and open countryside, native plants and wild herbs have been part of Irish life for generations. Used in food, drinks, traditional remedies and everyday life, they tell a story about the connection between people and the natural world.
A visit to The Herb School offers the opportunity to explore that story for yourself. Led by traditional herbalist Denise Dunne, The Herb School shares knowledge of native Irish plants and herbs through foraging walks, workshops and hands-on experiences.
For guests at The Grand Hotel, it is a chance to step beyond the familiar and discover another side of Fingal.

For thousands of years, herbs have played a role in how people cook, preserve food and care for themselves. Much of that traditional knowledge has been passed down through generations, while some of it has been forgotten along the way.
The Herb School is dedicated to making this knowledge accessible through practical, engaging experiences. From learning about edible wild plants to exploring herbs in food and drink, workshops and walks offer an introduction to the possibilities growing all around us.
It is not simply about identifying plants. It is about understanding the relationship between the landscape, the seasons and the traditions that have connected people with nature for generations.
