A native of Co Meath, Mark returns to Ireland from an exciting food journey of 16 years around the world and brings a wealth of experience, having worked in many prestigious international Hotels, and includes his last position as Head Chef at The Sydney Opera House, Australia.
Mark is renowned for tapping into culinary trends and has an instinct for what people want. His food reflects the setting, and his menus and techniques are strongly influenced by his international and local experiences.
An exciting personality, who exudes passion for local produce and is dedicated to delivering high quality experiences, Mark’s vision for the hotel is to incorporate local artisan ingredients into his menus, offering exciting, seasonal, well balanced and uncomplicated food.
